十六世紀，西班牙人將香草帶入歐洲，Vanilla之名即源自西班牙文，意思是「小豌豆」。目前產地有馬達加斯加島、印度尼西亞和加勒比海一帶。其中，留尼旺島所產的香草（波旁香草）屬於最頂級的品種。香蘭素（Vanillin），又名香莢蘭醛；香草醛，為一種廣泛使用的可食用香料，可在香莢蘭的種子中找到，也可以人工合成，有濃烈奶香氣息。廣泛運用在各種需要增加奶香氣息的調香食品中，如蛋糕、冷飲、巧克力、糖果；還可用於香皂、牙膏、香水、橡膠、塑料、醫藥品。
